Kid Friendly Manicotti/Ravioli Ricotta Pesto Dinner


Manicotti pesto was a hit!  Although, we had to cut the manicotti shells in half to fill them, which was much easier than stuffing them.  Easy, healthy recipe the kids did enjoy (at least one kid).  I think the pesto mixed in with the ricotta went over easier than having sauce onto of the manicotti which seemed weird to me, but it was a hit since the kids are turned off by some sauces!  

Use manicotti or ravioli shells.  Manicotti was easier to find.
Boil the shells till soft
We cut them in half afterwards to making filling easier for the kids.

For the Filling:
1 1/4 cups / 10Ox ricotta cheese
mix in herbs (basil, parsley, marjoram, oregano, thyme - as much as you want)  Let the kids sprinkle.  Use all or just some.  Whatever you want.  Make it easy!!!

We used a whole jar of pesto, but mix in as much as you want.

Fill the shells.

Place them in microwave pan.

Top with more mozzarella cheese, ground paper, and more spices.  Don't get crazy measuring or you'll go nutty!

Easy!!!  Kids had fun and Elle was impressed with the dinner she made.  And she ate it!
